Sloe & Marchpane

Sloe & Marchpane is a one room confectionery kitchen in Hood River, Oregon, run by Odile Varga, a pastry cook who spent eleven years in hotel kitchens before she came home to the valley. She buys raspberries from two farms on the east side of the river, cooks the puree with sugar in a copper pan until it reaches 107 degrees, pours it onto marble to set overnight, then cuts it into squares by hand and rolls each one in sugar.
