Tinaja & Cord

Tinaja & Cord is a four acre chile farm outside Mesilla, New Mexico, run by Rosalinda and her brother Teo on land their grandfather irrigated from a stone cistern, the tinaja that gives the farm its name. Every October the pods are picked fully red, braided onto cotton cord while still supple, then dried on south facing racks for three weeks. Nothing is smoked, sprayed or dyed, so the color a buyer sees in the pantry in March is the color that came off the plant.
